In commercial refrigeration equipment, the thermostat is the component that maintains a constant temperature inside the display fridge or refrigeration unit. Without a functioning, correctly calibrated thermostat, the compressor may run continuously or, conversely, start and stop erratically, leading to premature wear of the equipment and dangerous temperature fluctuations for stored products.

How a Refrigeration Thermostat Works

The refrigeration thermostat continuously monitors the temperature inside the equipment and commands the compressor to start or stop based on the set values. In practice, it defines two thresholds:

  • Minimum temperature – when reached, the compressor switches off;
  • Maximum temperature – when exceeded, the compressor starts again.

The difference between the two thresholds is called the temperature differential. Too small a differential means very frequent compressor starts and stops (accelerated wear), while too large a differential means significant temperature variations inside the display fridge.

Types of Refrigeration Thermostats

There are two main categories of thermostats used in commercial refrigeration equipment:

  • Mechanical thermostats (gas bulb type): operate based on the expansion of a gas or liquid within a sensor bulb. They are robust, inexpensive, and require no separate power supply, but offer lower precision (±1–2°C).
  • Electronic thermostats: use an NTC or PTC sensor to measure temperature and a microprocessor for control. They offer high precision (±0.1°C), the possibility of digital programming, and a real-time visual temperature display. They are especially recommended for display fridges storing sensitive products (dairy, cold cuts, pastry products).

How to Choose the Right Thermostat for Your Refrigeration Equipment

Choosing the correct thermostat depends on several factors. Here is what you need to consider:

1. Type of Products Stored

Each category of food products has specific temperature requirements. Dairy and cold cuts require temperatures between 0°C and +4°C, wines are best kept at 8–12°C, and ice cream needs -18°C or below. Make sure the thermostat you choose covers the full temperature range required.

2. Required Control Precision

For products with strict requirements (confectionery, pastry, pharmaceuticals), an electronic thermostat with high precision is mandatory. For fruit and vegetable storage or soft drinks, a good-quality mechanical thermostat may be sufficient.

3. Compatibility with Existing Equipment

Not every thermostat is compatible with every refrigeration unit. The supply voltage, sensor type, and connection method must be compatible with the existing installation.
