Forced-air cooling vs. gravity cooling: which system is right for your business?

When choosing a display fridge for a food retail store or a HoReCa establishment, one of the most important technical criteria is the type of cooling. Forced-air cooling and gravity (static) cooling work on different principles and are suited to different types of products. Understanding this difference can help you avoid stock losses, reduce energy consumption, and deliver products to your customers at the expected quality.

How gravity (static) cooling works

In a gravity cooling system, cold air descends naturally from the evaporator towards the displayed products, without the assistance of a fan. Temperature is distributed more slowly and evenly inside the display fridge, with no directed airflow.

Advantages of gravity cooling:

  • Naturally higher interior humidity — products do not dry out on the surface.
  • Quiet operation.
  • Ideal for cold cuts, dairy products, cheeses, and packaged prepared foods.
  • Generally more affordable purchase cost.

Disadvantages of gravity cooling:

  • Slower cooling can create temperature variations between shelf levels inside the display fridge.
  • Less effective in warm environments or locations with heavy customer traffic.
  • Not recommended for unwrapped fresh meat, which requires precise and consistent temperatures.

How forced-air cooling works

A forced-air system uses one or more fans to actively circulate cold air inside the display fridge. Temperature is maintained uniformly across the entire display area, regardless of external conditions.

Advantages of forced-air cooling:

  • Uniform and consistent temperature throughout the entire display fridge.
  • Rapid cooling recovery after doors are opened or new products are added.
  • Precise temperature control — essential for fresh meat.
  • Suitable for high-traffic locations or environments with higher ambient temperatures.

Disadvantages of forced-air cooling:

  • Air circulation can slightly dry out the surface of unwrapped products if the display fridge is not managed correctly.
  • Slightly higher noise level compared to static systems.

Which products require which type of cooling?

The choice of cooling system should be made according to the type of goods you display:

  • Cold cuts, dairy products, packaged cheeses, vacuum-packed meat — an excellent match for gravity cooling. The horizontal display fridges in the VF1000, VF1000D, and VFX1000 series, manufactured by Modaco at our own workshop in Găești, are designed precisely for these product categories.
  • Unwrapped fresh meat — forced-air cooling and precise temperature control are mandatory. Modaco's forced-air display fridges for fresh meat allow temperature adjustment between 0 and +8 °C; for optimal fresh meat display, the temperature is set to 0/+2 °C.
  • Pastry and confectionery — forced-air cooling with controlled humidity is recommended, to preserve the appearance and texture of the products.

An important detail: humidity control is a feature specific to meat-ageing display fridges, not a standard characteristic of ordinary forced-air display fridges. Do not confuse this function with simple temperature adjustment.

Practical tips for retail and HoReCa owners

  • Assess the ambient temperature of your commercial space — in warm or poorly air-conditioned locations, forced-air cooling is the safer choice.
  • Think about your product range over the long term, not just your immediate needs.
  • If you display multiple product categories, opt for separate display fridges with systems appropriate to each category.
  • Check the available dimensions — display fridges in the VF1000, VF1000D, and VFX1000 series can also be custom-made to your required dimensions, with a lead time of 15–25 working days.

Delivery and collection

Products available in stock can be delivered within 24–48 hours; shipping costs are calculated and displayed at checkout. Made-to-order products or display fridges built to custom dimensions are delivered within 15–25 working days. If you prefer, you can collect your order in person from the Modaco warehouse at Găești, Strada Libertății 15, by prior appointment.
