Display fridge maintenance – a practical guide

Proper maintenance of display fridges is essential for ensuring optimal performance, extending the equipment's service life and complying with food hygiene regulations. A regular cleaning and inspection schedule prevents costly breakdowns and keeps food safe.
Daily cleaning
Every day, after closing time, wipe down the interior surfaces with an approved food-safe disinfectant, in line with HACCP standards. Clean the shelves, trays and interior walls of food residue. Check the door gaskets and clean off any debris that could affect the seal.
Weekly cleaning
Once a week, carry out a more thorough clean: remove all the shelves and wash them separately, clean the condenser with a soft brush (dust build-up on the condenser can reduce efficiency by 20-30%), check the ice level in the evaporator area and start a defrost cycle if needed.
Periodic defrosting
Display fridges with static cooling require periodic manual defrosting, usually monthly or whenever the ice layer exceeds 5-10 mm in thickness. Switch the unit off, empty it of products, let the ice melt naturally and clean the interior. Never use sharp metal objects to remove ice.
Checking the gaskets
The door sealing gaskets should be checked monthly. A damaged or deformed gasket lets warm air in, forcing the compressor to work harder and increasing energy consumption. Gaskets can be cleaned with warm water and neutral detergents and lightly lubricated with food-grade petroleum jelly.
Temperature checks
Monitor the interior temperature daily using the built-in thermometer or an externally calibrated thermometer. Record the readings in the temperature log (mandatory for food businesses). Significant deviations from the set values may indicate problems with the cooling system.
Professional periodic servicing
We recommend an authorised technical service at least once a year, including: checking the refrigerant pressure, inspecting the refrigeration circuit for leaks, checking the electrical components and safety devices, and professional cleaning of the condenser and evaporator.
