How to organise frozen products in a chest freezer: a practical guide for retail stores and HoReCa
Why proper chest freezer organisation matters
A disorganised chest freezer is more than just an aesthetic inconvenience. Products stored incorrectly can reach unsuitable temperatures, expiry dates become harder to track, and customers waste time searching for what they need. Whether you manage a food store, a supermarket, or a HoReCa establishment, organising your frozen products correctly protects your stock, reduces waste, and improves the shopping experience.
Basic principles before loading the freezer
Before placing any product inside, make sure the chest freezer is running at the correct temperature. For frozen products, the storage temperature must be -18 °C or lower, in accordance with current regulations. Check the built-in or external thermometer and allow the freezer to reach its operating temperature before the first load.
Also, never exceed the maximum load line indicated by the manufacturer. Overloading blocks the circulation of cold air and creates warm spots where products may partially thaw.
How to group products: clear categories and zones
The first step in organisation is separating products by category. Mixing products from different categories leads to cross-contamination and complicates stock management. Here is how you can divide the available space:
- Frozen meat and fish – in a dedicated zone, separate from pastry products or frozen vegetables
- Frozen vegetables and fruit – grouped together, easily accessible
- Frozen pastry products and pizza – in their own section, preferably towards the end of the freezer
- Ice cream and frozen desserts – if the freezer is mixed-use, these must be clearly separated and, ideally, stored in dedicated chest freezers
If the volume of stock is large, consider using several specialised chest freezers, one per category. Modaco offers a wide range of chest freezers suitable for both neighbourhood shops and high-turnover HoReCa premises.
The FIFO rule: first in, first out
The FIFO (First In, First Out) rule is essential in any food storage environment. When new stock arrives, older products are moved to the front, while newly received ones are placed at the back or underneath. This way, customers or kitchen staff will always pick the product with the shortest remaining shelf life first.
Regularly check labels and remove from circulation any product whose expiry date has passed or that shows signs of refreezing (large ice crystals, damaged packaging).
Labelling and product visibility
In an open-top or lidded chest freezer, visibility is limited. For this reason, clear labelling of each zone is very important. You can use plastic dividers or labels stuck to the inner wall of the freezer to mark out categories. This also reduces the time staff spend searching for a specific product when filling an order.
For HoReCa establishments, it is also useful to attach a stock sheet to the lid of the freezer, updated daily, so that chefs can quickly see what is available without opening the lid unnecessarily multiple times.
Maintenance for maximum performance
A clean, well-maintained freezer consumes less electricity and keeps the temperature consistent. A few simple rules:
- Defrost the freezer periodically in accordance with the manufacturer's instructions
- Clean the gaskets and inner walls with food-safe approved solutions
- Check the condenser and make sure it is not blocked by dust or dirt
- Do not leave the lid open longer than necessary
