Digital Controllers for Display Fridges – Correct Settings for Retail Stores and HoReCa

Author: Echipa Modaco

Why Correct Digital Controller Settings Matter

A properly configured digital controller is the difference between a display fridge that operates efficiently and one that wastes electricity, compromises product quality, or fails prematurely. Food store owners and HoReCa operators frequently face the same problem: equipment is purchased, installed, switched on — and left on the factory default settings, which are not always suited to real-world operating conditions.

This guide explains in practical terms how to understand and correctly configure the digital controller of a display fridge, whether you have a horizontal unit for cold cuts and dairy or a vertical unit for fresh meat.

Essential Parameters of a Digital Controller

1. Working Temperature (Setpoint)

The first parameter you need to configure is the operating temperature. This varies depending on the type of products on display:

  • Cold cuts and dairy: the recommended temperature is between +2 °C and +6 °C.
  • Fresh meat: fan-assisted display fridges for meat have an adjustable temperature range of 0 to +8 °C; for optimum preservation of fresh meat, set to 0/+2 °C.
  • Pastry and confectionery: the typical range is between +2 °C and +8 °C, depending on the product.

Please note: setting a lower temperature does not automatically mean better-preserved products — it can lead to partial freezing of sensitive items and accelerated compressor wear.

2. Temperature Differential (Hysteresis)

The differential is the permitted deviation from the setpoint before the compressor starts or stops. Too small a differential means frequent compressor cycling (increased wear); too large a differential means significant temperature fluctuations inside the cabinet. A differential of 1–2 °C is generally optimal for retail display fridges.

3. Defrost Cycles

Automatic defrosting is essential for correct evaporator operation. Typical settings include:

  • Defrost frequency: 2–4 cycles per day, depending on ambient humidity and how often the cabinet is opened.
  • Cycle duration: 20–30 minutes is sufficient in most cases.
  • Defrost termination temperature: usually between +6 °C and +10 °C at the evaporator — enough to melt the ice without unnecessarily warming the refrigerated space.

An evaporator coated in ice drastically reduces the efficiency of the display fridge and increases energy consumption. Check periodically that defrost cycles are completing correctly.

4. Humidity Control – Only for Meat-Ageing Display Fridges

It is important to know that humidity control (humidistat) is available exclusively on specialised meat-ageing display fridges, not on standard display fridges for fresh meat, cold cuts, or dairy. If you own such an ageing cabinet, relative humidity is typically set between 75% and 85%, depending on the type of meat and the desired ageing period. Do not look for this parameter on the controller of a standard display fridge — it will not be there, and it is not required.

Common Mistakes to Avoid

  • Setting the temperature below the recommended limit for the product on display.
  • Disabling or ignoring automatic defrost cycles.
  • Changing parameters without consulting the controller manual or an authorised technician.
  • Ignoring alarms shown on the controller — these signal actual temperature deviations or early-stage faults.

Modaco Display Fridges and Their Configuration

The display fridges in the VF1000, VF1000D, and VFX1000 series, manufactured by Modaco at their own facility in Găești, are equipped with modern, easy-to-use digital controllers. These allow precise setting of the working temperature, defrost cycles, and alarms, giving the operator complete control over display conditions.

The display fridges are available in standard sizes or made to order, in dimensions specified by the customer. Custom-made units, like other made-to-order products from the Modaco range, are delivered within 15–25 working days. Products available in stock can be delivered within 24–48 hours; shipping costs are calculated and displayed at checkout. Orders can also be collected directly from the warehouse in Găești, at Strada Libertății 15, by prior appointment.

When to Call a Specialist

If the cabinet displays repeated errors, the temperature fails to stabilise around the setpoint, or defrost cycles do not complete correctly, do not attempt to adjust advanced internal parameters yourself. Contact your supplier or an authorised refrigeration technician. Incorrect intervention may void the warranty and worsen the fault.
