How Long Do Frozen Products Last During a Power Outage? A Practical Guide for Retailers and HoReCa

Author: Echipa Modaco

Why Every Hour Matters During a Power Outage

An unexpected power outage can turn a few ordinary hours into a costly problem. For owners of food stores, restaurants, or hotels, the question is always the same: how long do frozen products remain safe before they are compromised? The answer depends on several factors, and knowing them can make the difference between a minor loss and a significant one.

How Long Frozen Products Last, Depending on the Equipment

The general rule accepted by food safety specialists is that frozen products remain safe for consumption for 24 to 48 hours after a power outage, provided the door of the freezer or chest freezer stays closed. Here is what directly influences this time window:

  • How full the equipment is: A full freezer retains its temperature longer than one that is half empty. The thermal mass of the frozen products acts as a "cold reservoir."
  • The quality of the thermal insulation: Equipment with thick walls and seals in good condition loses temperature more slowly.
  • Ambient temperature: In summer, in an unventilated storage room, the internal temperature rises far more rapidly than in winter.
  • The type of product: Meat and fish are more sensitive than vegetables or frozen bread.

As a practical rule: if the temperature inside the equipment has not exceeded -18 °C during the outage, the products are still safe. If the temperature has risen above -12 °C for more than a few hours, it is advisable to seek an evaluation from a specialist before putting the products back on sale.

Refrigerated Products: A Much Shorter Time Window

Unlike frozen goods, refrigerated products — fresh meat, dairy, cold cuts, ready-to-eat meals — are far more vulnerable. The critical window is 2–4 hours at ambient temperatures above +20 °C. Display fridges for fresh meat, such as those in the Modaco range, operate at adjustable temperatures between 0 and +8 °C, and for fresh meat the recommended setting is 0/+2 °C. At these extremely low temperatures, any interruption of the power supply must be treated with the utmost seriousness.

What to Do Immediately After a Power Outage

Act quickly and methodically to limit losses:

  • Do not open the doors of freezers, chest freezers, or display fridges unless absolutely necessary. Every opening accelerates temperature loss.
  • Note the exact time the interruption occurred. This information is essential for subsequent decisions.
  • Use a thermometer to monitor the internal temperature without opening the equipment (thermometers with an external probe are ideal).
  • Contact your energy supplier to find out the estimated duration of the outage.
  • Transfer priority products to equipment powered by a generator, if one is available.
  • Do not refreeze products that have partially thawed without consulting a food safety specialist.

Prevention: The Investment That Protects Your Stock

The most effective way to reduce risks is to prepare in advance. A few preventive measures recommended for retailers and HoReCa:

  • A backup generator, correctly sized for the power requirements of the refrigeration equipment in use.
  • UPS units for monitoring equipment and thermal alarm systems.
  • Temperature monitoring systems with SMS or e-mail alerts — particularly useful at night or over weekends.
  • High-quality refrigeration equipment with high-performance insulation, which retains temperature for longer in the absence of power.

In this context, equipping yourself with reliable equipment makes a real difference. The chest freezers and freezers in the Modaco range, as well as the horizontal display fridges in the VF1000, VF1000D, and VFX1000 series — manufactured in the company's own workshop in Găești — are built with quality materials, precisely to ensure consistent performance and excellent thermal retention.

When It Comes to Cold Rooms

For storage facilities holding large volumes of frozen or refrigerated products, cold rooms are the optimal solution. Modaco imports and delivers cold rooms to order; installation is carried out on request, at an additional cost, by specialist teams. The delivery lead time for made-to-order products is 15–25 working days, and the transport cost is calculated upon order completion.

Order Refrigeration Equipment Suited to Your Needs

Whether you manage a food store, a restaurant, or a warehouse, choosing the right refrigeration equipment and carrying out regular maintenance are the best guarantees that an isolated incident does not turn into a major loss. In-stock products are delivered within 24–48 hours, and custom orders — including VF display fridges manufactured to the client's dimensions — are fulfilled within 15–25 working days. Orders can also be collected from the Modaco warehouse in Găești (Strada Libertății 15), by prior appointment.
