How to Properly Maintain a Display Fridge: A Complete Guide for Retail Stores and HoReCa

Author: Echipa Modaco

Why Regular Maintenance of Your Display Fridge Is Essential

A display fridge is one of the most important investments for any food store, supermarket, or HoReCa establishment. Without proper maintenance, equipment performance declines, energy consumption rises, and the risk of a costly breakdown grows ever greater. With a few simple, periodic operations, you can significantly extend the lifespan of your equipment and keep products in optimal food-safety conditions.

Refrigeration equipment by Modaco, manufactured in Romania since 1992, is designed for durability and efficiency; however, like any professional equipment, it requires regular care to operate at peak parameters.

Daily and Weekly Cleaning of the Display Fridge

Cleaning is the first and most important step in maintaining a display fridge. Here is what you should do on a regular basis:

  • Daily: wipe interior and exterior surfaces with a clean cloth dampened with a neutral cleaning solution. Remove food residues, spilled liquids, and grease marks before they dry out and become difficult to clean.
  • Weekly: clean removable shelves, drawers, and interior walls with an approved food-grade detergent. Make sure the display fridge is switched off or in defrost mode before deep cleaning.
  • Monthly: clean the condenser grille of dust and dirt using a soft brush or a vacuum cleaner. A clogged condenser is one of the main causes of overheating and high energy consumption.

Avoid using abrasive detergents, hard-surface sponges, or high-pressure water jets, as they can damage the surfaces and electrical components of the display fridge.

Correct Defrosting of the Display Fridge

Ice build-up on the evaporator reduces cooling efficiency and forces the compressor to work harder, leading to higher energy consumption and premature wear of the equipment. Regular defrosting is therefore mandatory.

Many Modaco display fridges are equipped with automatic defrost systems, which greatly simplify this operation. Even so, it is recommended that you periodically check that the system is working correctly and that the resulting water drains properly through the drain connection.

If the display fridge does not have automatic defrosting, schedule manual defrosting at least once a week, or whenever the layer of ice exceeds 5 mm in thickness.

Checking Temperature and Door Seal Integrity

Maintaining the correct temperature is essential for both food safety and energy efficiency. Check the temperature displayed on the control panel daily and compare it with the recommended values for the type of products on display.

  • Dairy products and cold cuts: between 0°C and +4°C
  • Cold beverages: between +4°C and +8°C
  • Frozen products: below -18°C

Also, periodically check the door seals. A worn or damaged seal allows warm air to enter the interior, constantly forcing the compressor to compensate. A simple test: place a sheet of paper between the door and the frame and close the door. If the paper pulls out easily, the seal needs to be replaced.

Periodic Technical Maintenance – When to Call a Specialist

In addition to the operations you can carry out yourself, there are technical checks that require the intervention of an authorised technician. A full technical service at least once a year is recommended, covering:

  • Checking the refrigerant level and detecting any leaks
  • Inspection and cleaning of the evaporator and condenser
  • Checking electrical connections and electronic components
  • Testing and calibration of thermostats and the control system
  • Lubrication of mechanical components where necessary

Neglecting these checks can turn a minor issue into a major breakdown, resulting in high repair costs and the risk of losing refrigerated stock.

Practical Tips for Efficient Use of Your Display Fridge

Proper maintenance also means using the equipment intelligently in your day-to-day operations:

  • Do not overload the display fridge – air must circulate freely between products for even cooling.
  • Do not place warm or unrefrigerated products directly inside the display fridge.
  • Keep the display fridge away from direct heat sources (sunlight, ovens, radiators).
  • Keep the area around the display fridge clean and unobstructed to ensure adequate ventilation.
