How to Size a Cold Room for Your Warehouse
Why Correct Cold Room Sizing Matters
An undersized cold room means compromised products, financial losses, and dissatisfied customers. An oversized one means unnecessary energy costs and a higher initial investment. Correct sizing is therefore one of the most important decisions you make when setting up or upgrading your refrigerated warehouse.
Whether you own a food store, a restaurant, or a hotel, this guide gives you the practical steps to choose the cold room that truly fits your needs.
Step 1: Determine the Volume of Products You Need to Store
The first thing you need to do is estimate the maximum quantity of goods you intend to store at any one time. Think about peak periods — holidays, weekends, or busy seasons — not just a typical day.
A few useful questions to answer:
- What types of products will you store (meat, dairy, vegetables, drinks, ready-made meals)?
- What is the maximum quantity in kilograms or pallets?
- Will you use shelving, Euro pallets, or trolleys?
- How often will you restock?
As a general rule, add a surplus of 20–30% on top of your current requirements to allow for future business growth.
Step 2: Calculate the Room Dimensions Based on Volume
Once you know how much product you need to store, you can estimate the useful volume of the room. Bear in mind that not all interior space is usable — you must leave room for circulation, ventilation, and shelf access.
A simple calculation: if you need 10 Euro pallets stacked on two levels, you will require at least 15–18 m² of usable floor area, with a minimum interior height of 2.5 m.
Standard dimensions for small and medium cold rooms are:
- Small: 2×2 m, 2×3 m — suitable for cafés, fast-food outlets, or convenience stores
- Medium: 3×4 m, 4×5 m — recommended for restaurants, guesthouses, or supermarkets
- Large: over 20 m² — for wholesale warehouses, hotels, or production facilities
Step 3: Choose the Right Working Temperature
The working temperature is a critical factor that directly influences the type of refrigeration equipment required and energy consumption.
- 0°C / +4°C — for fresh meat, fish, dairy, and ready-made meals
- +2°C / +8°C — for fruit, vegetables, drinks, and pastry products
- -18°C / -22°C — for frozen products, ice cream, and frozen meat
If you store products with different requirements, you may need two separate cold rooms or zones with different temperatures.
Step 4: Take Location and Ambient Conditions into Account
A cold room does not operate in isolation. External factors significantly affect performance and energy consumption:
- Ambient temperature inside the warehouse (which can exceed 35°C in summer)
- Frequency of door opening and the number of people entering
- Quantity of warm products introduced daily
- Degree of insulation of the building
All of these factors must be communicated to your equipment supplier in order to correctly size the refrigeration unit.
